Pumpkin Pie Bites




Soo I didn't take pictures as we were making them, so the pictures that you will see, are taken after the fact. But hopefully, you'll get my drift. Keep in mind, that the methods have yet to be perfected, but I'll tell you how we made ours, and what could be done differently (I'll put it in bold font)

The Sweet Dough recipe made roughly two and a half dozen pumpkin pie bites: (You could get 3 dozen if you use a slightly smaller cookie cutter to form the circles.)

3c Flour
1c Powdered Sugar
1/2 t. Salt
1c + 2T Butter (chilled)
2 Large Eggs, beaten

Mix the dry ingredients in large bowl. Cut in the butter. (It may be easier to pre-cut the butter into small-ish chunks and then use the pastry cutter to do the rest). Stir in the eggs till everything is incorporated.

Split the dough in half. You'll stick one half in the fridge to let harden while you're working with the other half. Roll the dough out till 1/4 inch thick.

1) Cutting the dough:

We used the big plastic cup shown, which is a smidge bigger than a pint glass. Using the plastic cup, we got 30 bites. Using the pint glass might give you 36 bites.


2) Making the dough forms:

Take a circle of dough and push it down into a muffin pan. Make sure you get the dough to be even around the top edge. Once the dough was in place, we used an espresso tamper to make sure the dough was perfectly round and secure at the bottom.


(I just wanted to show how the tamper will fit down into the mold. Make sure you're doing this once the dough is in the muffin pan, and not on top of a Tupperware lid ;) )


Once you've got all the slots in your muffin pan full of dough forms, pop it in the freezer while you do the next batch. This should give the forms about 30 minutes of chilling time. Basically, you want the forms to be nice and hard - like rock hard, actually. This will keep them from shrinking in the oven. After they are nice and frozen, take them out and get your foil party hat on - because this is where the fun begins! (or not so much..)

3) The foil:

Cut some foil squares. I think I must have cut them to be 3x3. Spray one side with cooking spray and put that side down. Make sure you press the foil down into the dough pretty hard - along the bottom, the corner, and the sides of the dough form. This will keep the dough from getting all puffy and full of bubbles, rendering your crust useless. Once all the forms are lined with greased foil, pop these bad boys into the oven while you get the next batch ready. You'll pre-bake the shells at 375 for about 10 minutes. They don't need to be browned when you take them out. They will brown during the final step.

The results of taking the time to do the foil lining paid off. However, Jeanne is thinking that it would be okay to skip this step, and the pre-baking of the shells, altogether. She's thinking that you can make the dough forms, fill them with the pumpkin pie filling, and go straight to the baking process. It would be worth a try, but we don't know how it would actually turn out. The concern with this would be that the crust doesn't have a chance to fully cook all the way through, including the bottom. There's nothing worse than a soggy pie crust, Amen?

With that said: Once the shells are pre-baked, you'll spoon the filling in. We used a 1/4c measuring cup, and it did well. We would, however, fill them a little bit more after we saw how it settled in the oven and during the cooling process.

4) Baking

Once all the forms are filled with the pumpkin pie yumminess, stick them in the oven WITHOUT a foil cover for 15 minutes at 375 and then 15 minutes more WITH a foil covering. Make sure that the crust is lightly golden when you go to cover it. It should continue to get a little bit of color during the last 15 minutes.

5) Cooling

Take the little bites of heaven out of the oven. Keeping them in the muffin pan, place on a cooling rack, till they're room temperature, or until you just can't take in any longer. And then enjoy! (With a dollop of whipped cream on top, of course!)

A little bit of this...

So, with some inspiration from Keri, I'm posting a bit of an update! It's probably not going to be all that awesome of one, but it's something! (with pictures!!)

In the middle of May, my parents came out to FL for about a week, and boy, was it action packed! We watched the last shuttle launch (awesome!), went to Disney (Hollywood Studios and Magic Kingdom), ate at some of our favorite dive cuban restaurants here in Tampa, and went to Egmont Key(pretty much a private island)/Fort De Soto Park and then to Ocala National Forest. Here are a few pictures highlighting exactly that!

Shuttle Launch and Policemans Hall Of Fame, Titusville, FL

We went to the Policeman's Hall Of Fame in Titusville, FL after the shuttle launch. Sr. Trooper William R. Hakim - OSP and Captain Thomas P. Tennant - Woodburn, OR. May they (and all who have given their lives) rest in peace.


This one's for my biggest brother, Evets! Matty-Jo, we tried to find a West Linn one, but no luck yet.

Visually Displaying Information

It is quite sad how we let the media direct our attention and concerns, often getting riled up about the most obsurd issues, and as a result we develope tunnel vision -  picking arguements and topics that are often times moot. The media tries to tell us (and often times succeeds!) what to be concerned about and what values we should hold, leaving many unhappy with our government and quality of life. 

While some may choose to talk about political topics that are currently all over the 'mass media' - I would like to address a topic that is a concern of mine and affects MY values. 


 
Some may feel more inclined to talk about how much it is costing us to save the lives of others in another country - and expressing that they are unhappy with the fact that our government doesn't provide free universal health care, free universal preschool, and doesn't spend enough on cancer research.  

Why don't we focus on how many LIVES are taken every year due to abortion. It pales in comparison to how many lives have been taken fighting terrorists and oppressors. 

When Obama was asked about when an unborn baby gains human rights, he responded that it was "above my paygrade" to answer that question with specificity. Not a surprise since he is infamous for dodging questions that allude to his personal set of values. Everyday I read about Obama in the media I realize his values are determined by whatever set of values will get him elected. Need I reference Chris Wood's recent blog entry Democrats finding religion.

Back to the topic of discussion - Abortion. You can argue all you want that there are certain instances where abortion is necessary.  i.e. rape, incest, or cases where the mother would most certainly die. Should we say that ALL abortion is legal because of these instances? Or how about partial birth abortions, which Obama is not in oppostion to? 

Next time you want to talk about how much the war is costing us, maybe you should focus on the fact that you can't really put a price on life. Focus on character, rather than the latest fad.

Florida and Wildlife

I (Andrew) have found a new extra-curricular activity here in Tampa, FL - searching for any and all types of wildlife, and photographing them!

I don't have all of the equipment necessary to present stellar photos, but I am working on it and with time (and money) I'll have all the equipment necessary to create pieces of mastery - OK, that may be stretching it.

I'm trying to focus on animals in their natural habitat and ones that are not photographed in captivity, but their will be a few from awhile ago..



Turtles On A Log
It seems as though the skies the limit with the amount of wildlife you can find around here. I recently discovered that there is an owl (still working on an ID) WHO lives within walking distance and a great patch of land, that has all kinds of little critters and birds, that is also within walking distance of our home.



I have also started a Flickr Group for Presso Espresso enthusiasts that I hope will grow and provide a place for Presso (All-Clad Presso owners too!) owners to share their secrets to pulling the best shot's out of the best little lever action espresso maker I have ever come across!

Family Time!

This last weekend was a blast. We celebrated Dad's/Mike's/DIL's birthday, stylishly, here in sunny Florida!

We checked out The Kennedy Space Center, Myakka River State Park, The Dali Museum (St Pete), and The Sarasota Wine Festival. We also made coffee, made some extra tasty food, played fun games (SkipBo and Carcassone) and enjoyed the company of Heyford, Meleta and Nala!

Home made Key Lime Pie! (Eat your heart out Rob!)

Many do not know that Key Lime pie actually originated
in Florida.
If you want to make an authentic one you have to use Key
Limes (Citrus aurantifolia) rather than the Persian limes
you will find at most grocery stores (I'm sure Rob already
knew this, being the Key Lime pie connoisseur he is!)



This was from awhile ago but I have to mention it. Joanne
made home made french bread. This was the tastiest
french bread I have ever eaten in my whole life!! PROPS!
